I can’t believe it’s the end of May! Thank you for all of the wonderful birthday wishes, I truly had a great week of festivities! This past year, I really didn’t want to make too big of a deal about my birthday. It’s something I didn’t really talk about too much, and I certainly tried to play it down. The day started off with what’s becoming my favorite weekday routine: coaching! Despite having to work that day (and it was a really busy day!), the night ended with Greg taking me out to my favorite dinner, sushi. Dinner at Ijji was great and I was in bed by 10pm. All in all, a really great day!
With Memorial Weekend coming, I’m looking forward to some R&R. While we won’t be in Kauai or at Del Mar for the California Regionals, we’re setting off to Solvang to celebrate our friends getting married. I’m always excited to celebrate weddings and I especially love when there’s sunshine involved. The upcoming week is certainly going to be busy again, but we’ll get through it!

Loves / Inspo – Fitness:
My weekend has been consumed by watching the East and South Regionals. While all of the big names are doing their thing, I honestly find the most inspiration from those who are the quiet forces. They don’t have big sponsors backing them and they juggle multiple life responsibilities. In watching all of the heats, the effort that goes in to each workout is incredible. With two of my friends heading into the California Regional next weekend, I’m really looking forward to watching them put it all out there. Keep an eye out for Sarah and Cassie next weekend!

It’s wedding season! I’ve concluded that I’m not really a dress wearer during the week. Maybe it’s because they don’t always fit me the way the should. But, when it comes to special occasions, I’m all about dresses! The latest phase of dresses I’ve been entertaining have been bright summer colors! Loves / Inspo – Food:
I love Korean beef recipes. Korean barbeque is one of my favorite meals, and I can never say no. At the same time, I have a hard time recreating the “magic” I get at Korean restaurants. I try pretty hard to recreate it at home, and I love discovering new recipes that get me closer to the real thing. Korean beef recipes can be Paleo friendly and involve fairly simple ingredients. I mentioned I’m going to Solvang this coming weekend. Don’t know where Solvang is? It’s just north of Santa Barbara, slightly inland from Lompoc on the Central California coast. Many people know Solvang for its iconic windmills, but there’s more. Yes, OstrichLand USA is also in Solvang. The more you know, right?
